Can anybody help me to find a PROPER manual for the HDR 1000S? The manual that comes with it is Freesat specific and doesnt cover a number of features that I know exist, like non-freesat satellite stations, DNLA and what the USB sockets are for.

Such a thing does not exist.
The USB sockets are for importing or playing media files.
The DLNA client is for playing media shared by a remote DLNA server.
To use non-freesat channels you need to do and save a channel search.

To get access to a proper manual that's detailed in every aspect of every function of the HDR 1000/1010s you need to follow these instructions:
    1) Turn and face your nearest brick wall.
    2) Ask said brick wall about any features you wish.
    3) If there's anything else regarding features you would really like to know then it's best to just ask here instead
