I picked up a faulty Foxsat HDR and apart from it being tatty externally it is fully working!

There is currently a 320gb seagate drive in it (original from factory) with Raydon's CF installed by myself earlier today. I am wondering is it possible to swap this drive out for a bigger one, I would be happy with a 500gb if that is the upper limit. Is there any particular type I should be sticking with, same type as the original etc. Label says it is a PIPELINE HD? Assuming this is an AV drive...

Yes, it's possible. I used a WD 1TB green drive. I seem to remember that it was necessary to put a link (between 5-6 for WD) on the drive to slow the data rate.

WD AV-GP 1TB drive in my Foxsat since 2008. 1TB is largest drive that the box can set up by itself.

As Andyrfras says newer faster Sata drives may require a jumper on pins 5 and 6 to make them compatible with the older drive controller in the Foxsat.
