My FOX T2 has finally conked out after seven years of good work. There are a couple of programmes stored on there that I would like to keep (one in which I appear and a couple of other special ones) and I wonder if there is any way to record them on to permanent media eg DVD. None of them are available on Demand.

Recording to DVD etc. from HD?

A lot depends on why the HDR-FOX-T2 died.
If you remove the hard disk does the box boot up as a non recording box ?
If the Hard disk has completely failed and it's not possible to repair the File System by removing the drive and connecting it to a PC, then there is no way of recovering the recordings. Had you copied the recordings to a usb drive prior to the box failing then all the recordings may have been recoverable.
Are the recordings made from a SD channel or a HD one. ?
Does your PC have a DVD recorder optical Drive ?

My PC does have an optical DVD drive.You should be able to connect a USB stick to the box USB port and copy the recordings you want to it and transfer the files to a folder on a PC by transferring the stick to your PC. (post if you don't know how to do this). The files you need are the xxxx.TS Files.
Technically these are mpeg2 Transport stream files easily converted to mpeg2 programme stream files as used on DVD-Video.
All you now need is a some DVD Authoring software to create a DVD-Video format from the .ts video file format and some DVD-blank discs which cost as little a 16p.
