Anyone know why USB Eject is in the "Hidden" menu?
Does it mean that there is no need to eject USB drives that has been attached to transfer or play recorded content and they can safely, simply be disconnected?

Based on experience, never had an issue with disconnecting a usb device from any of the Humax pvrs. Obviously you need to wait until drive activity ceases, especially if writing to the device.
Incidentally there's no way I know of ejecting a usb drive on a Foxsat-hdr
It's mainly an issue with PC's that may be using delayed writing, using the usb eject capability ensures pending write operations are completed first and also checks if any running software is using any of the content.
My experiences with computers and usb drives are as you describe graham. Just puzzled as to why Humax thought the eject facility worth including but then hiding it away. I suppose it could just be intended for engineers using usb drives to test or change software.
