The way a Topfield PVR with MyStuff and Extend does it gives you the best of both worlds. You get the padding and automatic bookmarks where the Accurate Recording signals are received with Play starting at the first bookmark which you can jump back from if the programme has already started.

Where is the setting to turn Accurate Recording on?

I have previously had padding set to 2 mins start and 5 mins end, but was still missing the beginning of some programs so have set them to zero hoping this would use "Accurate Recording" but now things appear to start bang on time and missing the beginning of most things...

If Start and End padding are set to Off, then unit is using accurate record - subject to broadcaster of course.

On which channels? Accurate recording works very well for us on the major channels.

BBC One HD was the noticeable one.

Curious. The BBC channels are usually spot on being bang in the middle of the inter-programme idents. The other broadcasters are more careless.
