    Looking at the kingofsat.net web page for Astra, am I right that each transponder is represented by each block of around 10 channels. Eg. the first transponder showing is #41, which would imply that I could watch Channel 4 London, and record Film 4.

    You are correct, the transponder frequency is the number in the header followed by the polarisation (H - Horizontal V - Vertical) and the transponder number.

    eg 10714.25 H 41

    There is a customised list for Freesat in webpage html or Excel downloadable from the link I posted above.

    Incidentally I guess your box has non-freesat mode. If so you can watch any channel shown as fta in the KOS list by manually tuning it.
